French macarons in Korea should be divided into four classes; 'Not good', 'So so', 'Tasty', and 'Les Prémices'. Once I entered the shop, my mind went bananas with seeing the countless collection of colorful macarons. The macarons though, were smaller and thinner than I expected, despite being 2,500₩ ea. Bestsellers such as Crème Brûlée had already been sold out at lunchtime, but luckily, I was able to grab the ones that I came for. The flavors I bought are: Cognac, Cherry Blossom, Earl Grey Tea, Pistachio, Blueberries, Truffle. This place humbles all the other macaron cafés I previously visited. Simply on another level. The texture is beyond perfect. The soft, chewy meringue is mind-blowing, and the filling, while not too sweet, has an excellent aroma to it. It was after a single bite, that I accepted why this puny dessert costed this much. The flavors that I vigorously recommend are Cognac and Truffle. The rich brandy and the strong, thick truffle give the macarons a heterogeneous yet fascinating taste. The other flavors also have their charms, but predictable. The only one that didn't impress me was the pistachio, probably because adding a nut-based paste to an already-almond-rich meringue made it a bit too heavy. On my next visit, my dream is to say, "Give me every flavor on the menu, please." Unfortunately, my stomach is to small and my bank account too fragile to accomplish such a feat. What a shame. 마카롱 평가 기준은 네 단계가 필요하다. '별로', '괜찮다', '맛있다', '레프레미스'. 일단 매장에 들어서면 수많은 종류의 마카롱에 눈이 핑핑 돈다. 근데 생각보다 크기는 작았다. 사진으로 봤을 땐 크고 납작할 줄 알았는데, 실제로 보니 작고 더 납작하다... 점심 직후에 갔음에도 크림 브륄레같은 인기 메뉴들은 품절이였지만, 다행히도 내가 찾던 맛들은 남아 있었다. 내가 주문한 맛은 - 꼬냑, 벚꽃, 얼그레이, 피스타치오, 블루베리, 송로버섯. 내가 지금까지 먹었던 마카롱들은 뭐였지? 여기 마카롱은 어나더 레벨이다. 식감이 완벽에 가깝다. 베어 물면 쫀득하게 바스라지는 꼬끄와, 너무 달지 않으면서도 재료의 향은 극대화시킨 필링, 어느 하나 빠지는 게 없다. 이 작은 쪼가리가 2,500원이나 하는 이유가 단번에 납득된다. 꼭 드셔 보셨으면 하는 두 가지 맛이 있는데, 꼬냑과 트러플이다. 화려한 꼬냑 향과 강렬한 트러플 향이 들어간 마카롱은 지금껏 경험해 보지 못한 이질적인 느낌이 나면서도 대단히 잘 어울린다. 다른 마카롱도 저마다의 매력이 있지만 어느 정도 예상 가능한 맛이다. 피스타치오는 안 그래도 아몬드가 엄청 들어간 꼬끄에 견과류 필링까지 더해져서 그런지 좀 부담스러웠다. 다음에 갈 때는 마음 같아서는 "여기 있는 거 종류별로 다 주세요!" 하고 싶다. 하지만 그러기엔 내 위는 너무 작고, 지갑은 너무 얇다.
